Making the best homemade almond milk is easier than you think! All you need are raw almonds, vanilla beans, dates, and a bag of nut milk to make vegan sweet almond milk. Gluten free And it’s paleo friendly.
This recipe was inspired by a coffee shop we used to frequent. In Minneapolis it’s called Penny’s, they made the best vanilla almond milk we had to remake when they closed down a few years ago!
Why did it take us so long to make our own homemade almond milk recipe? It’s finally happening and we’re very excited about it.
We were inspired by a coffee shop in downtown Minneapolis called Penny’s (which recently closed — SAD), a chic + cozy coffee shop with a great patio. When we first worked there We ordered an almond milk latte with homemade almond milk and dates! Electric light bulb.
Quick summary: Homemade almond milk is easier than you think. All you have to do is soak raw almonds in water overnight to soften them. Then mix the almonds with water (+ whatever flavor you want) until the almonds are pulpy and strain through a bag. Nut milk to get milk The almond to water ratio is 1:2, so if you have 3 cups of almonds, use 6 cups of water.
Ingredients you need to make almond milk.
- Raw Almonds: We recommend raw almonds as they have a mild flavor.
- Dates: We use dates for sweetness. Make sure your Medjool dates are soft to blend well,
- Vanilla Bean: This is the cherry on top! If you don’t have vanilla beans You can use vanilla extract instead.
- Pinch of salt: Salt brings out the natural flavors of almonds, dates, and vanilla.
For this recipe You will need a high speed formula and a nut milk bag to separate the pulp from the milk.

How to make almond milk
Step One: Soak Almonds
This par takes a bit of time. But we recommend soaking the almonds in water for at least 24 hours. This will make the almonds softer and easier to blend.
Pro tip: If you are in crisis You can boil raw almonds by bringing a pan of water to a boil. (Add enough water to cover all the almonds) then pour in the almonds and boil in one go. Remove from the heat and soak for another 1-2 hours or until the almonds are soft.
Step Two: Blend
Place the softened almonds, dates (make sure to remove the seeds!), vanilla bean, salt and water in a blender. Mix, mix, blend until smooth.
Step Three: Stress
Pour the mixture into a nut milk bag and squeeze. You may need to do this in 2-3 batches, pouring 1/2 or 1/3 of the liquid into the nut milk bag each time to avoid spills.
Make sure you have a container big enough to hold all of the almond milk when you strain the almond milk from the nut shells!
Don’t have a bag of nutmeg milk?
Try using a thin dishcloth or kitchen towel instead of a nutmeg milk bag! The goal is to separate the pulp from the almond milk.

Other ways to prepare almond milk
If you don’t have a date, no problem! You can use other natural sweeteners. To increase sweetness (Or none at all!) Here are some other ideas:

How to store homemade almond milk
Store homemade almond milk in an airtight container and in the refrigerator. Be sure to use it within 7 days.
How long will homemade almond milk last?
Homemade almond milk will last up to 5-7 days when stored in an airtight container and refrigerated. This is because homemade almond milk isn’t as shelf-stable as store-bought almond milk. It’s best to drink it fresh!

- 1 pound. raw almonds 3 cups
- 6 bowl of water +additional for soaking
- pinch salt
- 6-15 pitted medjool date unnecessary
- 1/2 1/2 teaspoon vanilla bean paste or vanilla extract unnecessary

First, place 3 cups of almonds in a large bowl. Then soak it in water until completely covered and leave it for 24 hours*

After 24 hours, your almonds should be soft(er). Strain and rinse. Then put in a high speed blender.

Add 6 cups of water and a pinch of salt. 15 seedless Medjool dates and 1/2 vanilla bean

Blend on high speed for 1 to 2 minutes or until everything in the blender is broken into pieces.

Use a nut milk bag to strain the almond milk from the nuts. Then squeeze out as much milk as possible. Then pour it into a jar.

Store in the refrigerator for up to 5 days.
Tips and Notes
- Serving size: 1/2 cup
- For faster softening options: Bring a pot of water to a boil and pour in the raw almonds. Remove from the heat and let the almonds soak for 1-2 hours or until soft.
- Medjool dates and vanilla are optional flavorings for our homemade almond milk recipe. Start with 6 days ago or more depending on how sweet you like it.
