Last week I went to Fire Island with some high school friends and their kids while sitting on the beach. To make foolproof salmon on the grill I use salmon with the skin removed. and place the salmon skin side down directly on the grill. Cover the grill and let it cook like in the oven. Without turning! For the avocado bruschetta: (makes 2 1/4 cups)

  • Combine onions, olive oil, balsamic, kosher salt, and 1/4 teaspoon pepper. Set aside 5 minutes.
  • Chop the tomatoes and place in a large bowl. Mixed with garlic, basil, onions-balsamic. and additional 1/8 teaspoon salt and pepper, to taste. Set aside for at least 10 minutes.
  • Preheat the gas grill to medium-high. Generously oil the grill to prevent fish from sticking.
  • Season the salmon with salt and freshly ground black pepper to taste.
  • Place skin side down on wire rack. Cover and cook, without flipping, for 8 to 10 minutes (depending on thickness) or until salmon is cooked through. The skin will burn but this will prevent the fish from drying out.
  • Remove and cover with foil. Set aside for 2 to 3 minutes while you add the avocado to the bruschetta.
  • Serve with 1/2 cup avocado bruschetta.
