This is one of my favorite dump recipes because you mix everything uncooked and then bake it. But what’s even cooler about this vegetarian casserole is that you whip up protein and whole grains with just one ingredient -> quinoa!

We did not test this recipe with regular quinoa. Therefore, we do not recommend using regular quinoa because it is not prepared in the same way. and results may vary.

Can I make this in the Instant Pot?

yes! Place it in the Instant Pot for 30 minutes on high pressure. Then it was quickly released. Or you can place it in a slow cooker for 4 hours on low heat.

What size casserole dish do you use?

We used a 9×13 casserole dish, you can find it here! It is standard size But if you use a smaller plate than this You may need to adjust the cooking time.

How to store and freeze

fridge: Store in an airtight container, such as a Pyrex glass, in the refrigerator for up to 5 days.

Freezer: If you plan to freeze We recommend baking this in a disposable aluminum casserole dish. Place a sheet of plastic wrap over the cooled, cooked casserole. Expel all air. Then wrap the entire casserole in foil and place in the freezer. Write the name and date of the casserole on the foil.

If you want to reheat it again Remove the frozen casserole from the freezer and let it thaw in the refrigerator overnight. Reheat individual casseroles in the microwave or reheat the entire pot in the oven (we recommend 40 for 20 minutes).
