Important ingredients

  • Thyme. I always use fresh basil in this recipe. It bakes better than dried basil and adds lots of extra flavor.
  • Sweet potatoes. I recommend orange-fleshed sweet potatoes as they have a softer texture and hold more moisture. But you can experiment with white-fleshed and sweet potato varieties as well.
  • garlic. Whole garlic cloves infuse any dish with a nutty and sweet flavor. And it increases in intensity beyond what you can get from garlic powder.

Step by step instructions

1. Prepare the ingredients. Place the sweet potatoes, garlic, and thyme on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with spices.

2. Roast until potatoes are soft. Add honey halfway through, if desired.

3. Season the sweet potatoes. Squeeze the garlic from the skin and mix with the potatoes. Serve and enjoy!

Recipe tips, substitutions, and variations.

  • Don’t rush it. Let the roasted sweet potatoes cook for as long as necessary. It may take 25 to 45 minutes for the meat to soften and begin to brown.
  • Cook the sweet potatoes into even balls. For the same cooking I find it very important to cut the sweet potatoes into evenly sized cubes. I aim for 1-inch cubes, but you can reduce the size slightly to reduce cooking time.
  • Use garlic powder instead. I recommend fresh garlic if you have it, but if not, toss the sweet potatoes, olive oil, and 3/4 teaspoon garlic powder in a bowl before spreading it evenly on the baking sheet.
  • Use rosemary instead of thyme. If you’ve used up all your basil, I find that fresh rosemary works well in this recipe as well.
  • Out of honey? You can substitute pure maple syrup. Honey is sweeter. So you will need to add 1 1/4 tablespoons of syrup.
  • Add toasted pecans. One great variation I keep coming back to with this recipe is garnishing it with toasted pecans. The combination of crunchy pecans and crunch of roasted sweet potatoes is delicious.

Provide instructions and storage in advance.

To save time I usually prepare this dish quickly. I chopped up the sweet potatoes and mixed them with garlic, thyme, olive oil, and spices in a large container. I put this in the refrigerator until I’m ready to bake it.

That way, when you’re ready to eat, All you have to do is spread it evenly on a baking sheet and roast for 25 to 45 minutes.

If you have any leftovers in this dish, Put it in an airtight container and store it in the refrigerator. They will last well for three to five days.

Reheat by spreading onto a baking dish and cooking at 400 degrees Fahrenheit until warm.
